There are said to be over 200 varieties of coffee beans: each with unique aromas and flavors, which are enhanced by different styles of roasting. At TOKYO COFFEE, we strive to maintain a high standard by roasting all our beans in monitored small batches.
Our Roastery is located in an old housing complex of Tokyo where locals do their daily shopping. Planting ourselves in this unpretentious area keeps us in touch with the people around us, while letting us pleasantly surprise our customers with excellent coffee.
Produced on the 221 hectare TADE GG Farm in Shakiso; a town in the Guji zone of the Oromia region of Ethiopia, an impressive 1,860-1,950 meters above sea level. The region’s cool temperatures and fertile volcanic ash soil is ideal for slowly ripening coffee cherries, producing dense beans with a sweet, complex profile.
A slow, gentle, chemical-free decaffeination process praised for leaving no residual taste and best preserving the flavor and aroma of coffee.
The beans are soaked in the purest hot water from Mexico's highest mountain, Pico de Orizaba, to extract caffeine. The water is then filtered to remove caffeine, leaving behind any soluble compounds. The now decaffeinated beans are replaced into that solution to reabsorb the compounds without the caffeine.
Full City is the medium dark roasting level that best balances bitterness and acidity. Roasting until just after the second crack results in a rich flavor that blends bitterness with sweetness, while retaining a faint acidity. The beans have a slightly lighter flavor compared to dark roast, and display a deep brown color with a hint of black.
We recommend this decaf to those who love to drink coffee but feel frustrated because of caffeine sensitivity. Decaf Ethiopia cuts out 97% of caffeine, yet tastes no less rich and full than other coffees.

Hot water (195-205°F) 320ml
Coffee (finely ground) 20g
Dripper, Filter, and Scale
Wet the filter with hot water. Then discard the hot water from the server.
Add 20g of coffee, slowly pour 40ml of hot water in a circular motion, then wait 30 sec.
Pour 70ml of hot water at a time, every 30 seconds, until the water is gone.
Pour the coffee from the dripper into the cup once all the water has dripped through.
