One of our most popular flour blends, this artisan whole grain style mix is free from rice, corn, and gums! Great for yeast breads. Can be used anywhere gluten free flour is called for, or in place of BB Original Blend, Cake Flour, or Bread Flour.

Ingredients: Sorghum Flour, Tapioca Starch, Potato Starch, Psyllium Husk, Potato Flour
ALL INGREDIENTS into the bowl of the stand mixer.
COMBINE DOUGH. Attach the paddle attachment to the mixer. Beginning on low speed, mix to combine, about 2 minutes, then increase speed to high. Continue to beat for 3 minutes, or until dough is cohesive and fluffy. Turn mixer off, and remove paddle.
TURN DOUGH into a 6-8 quart container with a lid (or cover with plastic wrap). COVER TIGHTLY and refrigerate 30 minutes to 1 week.
PREPARE A BAKING SHEET OR FORM. Grease an 8-inch cake pan (dinner rolls) or line a baking sheet with parchment paper, sprinkling 1-2 Tbsp flour or cornmeal. SHAPE DOUGH. Lightly flour a surface, roll dough to coat, and release gas. Divide into 12 (dinner rolls), 8 (sandwich rolls), or 6 (large buns). Flatten, pull edges to center, pinch, and roll smooth.
PLACE DOUGH:
PROOF. Cover with a warm, damp cloth and let rise 45-50 minutes until doubled.
PREHEAT OVEN to 450°F.
BAKE. Remove cloth, place rolls in oven, add 4 ice cubes, shut door, reduce temp to 375°F, bake 6-7 minutes. ADD 4 MORE ICE CUBES. Bake 15-18 minutes until golden, 205°F internally. COOL 10 minutes before serving, 45 minutes before storing.
Sponge Mix Sponge Ingredients. Put all of the sponge ingredients into the bowl of an electric mixer and mix until well combined.
Cover and set on the counter to ferment for at least 1 hour and as long as 4 hours.
Dough Add Ingredients. Into the fermented sponge, add the artisan blend flour, butter (or vegan butter), apple cider vinegar, and salt.
Mix Ingredients. Using the paddle attachment of your mixer, begin mixing on low to combine. Increase to medium/high speed for 5 minutes until the dough is cohesive and fluffy.
Gather dough together in the mixing bowl and cover with plastic wrap.
Refrigerate for 2 hours to allow the dough to hydrate and chill.
Prepare a baking sheet with parchment paper. Add a small amount of flour to the parchment to avoid sticking and set aside.
Lightly flour your board and put the dough onto the board.
Roll dough into a rectangle, about 2 inches in thickness.
Cut Dough. Use any sharp object like a knife or pizza cutter to cut dough into squares, or use a 3 inch square biscuit cutter.
Transfer the cut rolls onto the prepared baking sheet.
Brush the tops of rolls with milk or vegan milk and let rise until doubled in size, about 35 to 45 minutes.
Baking Bake at 475° F for 20 to 25 minutes, until golden brown or to an internal temperature of 210°F on a digital thermometer.
Remove from oven and brush hot rolls with melted butter or vegan butter. Enjoy!
