Sift the matcha into a bowl to remove any clumps, then add a small amount of hot water. Whisk until the powder is fully dissolved and the mixture becomes smooth and even.
This creates a balanced matcha tea base suitable for daily enjoyment. Adjust water and tea levels slightly to suit your preference.
Start with the prepared matcha tea base. To achieve koicha, keep the mixture highly concentrated by adding little to no additional water. Stir slowly and deliberately so the matcha blends into a thick, smooth consistency rather than creating foam.
Koicha should appear dense and glossy with a rich texture. If needed, adjust with only a small amount of water while maintaining its thick character.
Prepare the matcha tea base using the standard instructions. Once ready, add more hot water to dilute the base to your preferred strength and stir or whisk briefly to combine.
For a chilled version, pour the prepared usucha over ice. Adjust the amount of added water depending on how light or bold you prefer the flavor.
Heat or chill your preferred milk, then add it to the matcha and mix until fully combined.
Sweetener may be added to taste, however, our Uji Ceremonial matcha is naturally sweet and filled with umami, so we recommend not adding any at first. For an iced latte, pour the milk and matcha over ice and stir well before serving.
