Our staff in Japan carefully hand-pick all our green beans in order to ensure that no damaged beans or foreign materials are included in the coffee that makes its way to you.

There are said to be over 200 varieties of coffee beans: each with unique aromas and flavors, which are enhanced by different styles of roasting. At TOKYO COFFEE, we strive to maintain a high standard by roasting all our beans in monitored small batches.

Our Roastery is located in an old housing complex of Tokyo where locals do their daily shopping. Planting ourselves in this unpretentious area keeps us in touch with the people around us, while letting us pleasantly surprise our customers with excellent coffee.

Only the native varieties of Typica and Bourbon are cultivated, using traditional organic methods without any chemical fertilizers or pesticides. The cherries ripen slowly under shady trees, turning a deep red, and are carefully hand-picked. Afterward, they are dried naturally in the sun over an extended period, resulting in a rich, sweet, and slightly tangy coffee.

Grown in the village of Santa Eulalia, at an altitude of 1,300 to 1,800 meters, and deep in a mountainous terrain so isolated that it is often referred to as a hidden gem. While the town offers beautiful views of cloud forests, the infrastructure is extremely poor. However, thanks to Fair Trade production, essential facilities such as schools and hospitals have been built to improve the community's quality of life.

Full City is the medium dark roasting level that best balances bitterness and acidity. Roasting until just after the second crack results in a rich flavor that blends bitterness with sweetness, while retaining a faint acidity. The beans have a slightly lighter flavor compared to dark roast, and display a deep brown color with a hint of black.

Our medium-dark roast Guatemala has pronounced depth of flavor with little bitterness. Perfect for customers searching for a strong but smooth, mellow taste with moderate citrus.

Hot water (195-205°F) 320ml

Coffee (finely ground) 20g

Dripper, Filter, and Scale

Wet the filter with hot water. Then discard the hot water from the server.

Add 20g of coffee, slowly pour 40ml of hot water in a circular motion, then wait 30 sec.

Pour 70ml of hot water at a time, every 30 seconds, until the water is gone.

Pour the coffee from the dripper into the cup once all the water has dripped through.
