Sodium Alginate Uses and Tips
Tie-Dye Uses
Sodium Alginate takes time to dissolve and thicken, plan on prepping the mixture at least an hour beforehand to allow for the liquid to thicken.
Add 2 tsp of sodium alginate to warm water while stirring vigorously. Do not shake the mixture as it may result in clumping. Wait 10 minutes, then stir some more. Continue stirring over a one hour period until the thickener sets. Some lumping may occur, you may scoop them out or stir some more to dissolve them. A blender may also be used to minimize lumping. Add more sodium alginate if the mixture needs to be thicker. If the mixture is too thick, then thin with water. Add dye powder afterwards once desired thickness has been achieved.
Spherification Uses
Spherification is a technique that consist of submerging a liquid with sodium alginate in a bath of calcium to form a sphere, similar to caviar spheres.
Vegan Eggs
An important ingredient in any vegan egg yolk recipe.
Spherification tips
Avoid clumping by adding the powder in small increments while mixing.
Be patient as it may take 5 minutes plus for the sodium alginate to fully disperse.
Leave the sodium alginate solution rest in order for the trapped air bubbles to escape, this can take up to 24 hours. The result will be bubble free spheres.
