Fewster’s Farm is one of the largest producers of honey in Western Australia. Our honey is as pristine as the environment it comes from. It is never heat-treated, and no chemicals or preservatives are added. The honey is collected naturally from the hive and delivered straight to your home.

Our honey extraction and processing center is regularly inspected by the Organic Food Board, and the honey is sourced from environments with no agricultural or industrial activity within a 5 km radius.

Kim Fewster, a fourth generation beekeeper lives on the old family farm in Muchea where the prized honey is extracted and bottled. The farm has belonged to Fewster’s family since 1898 with honey being commercially produced there since 1916. Kim has been a passionate beekeeper for as long as he can remember and from an early age Kim started working with bees under the careful instruction of his father and grandfather, both lifelong beekeepers.

Kim has actively promoted and developed the image of Western Australian honey through being one of the biggest producers and exporters in Western Australia.

When the Asian Apiculture Conference was held in Perth in 2006, Kim was the president and host and remains as the Australian representative of the Asian Apiculture Association. He has also played a big role in developing the Western Australian & Australian National Apiculture Associations and is still a central figure in both associations.

Fewster’s Farm Honey is sourced from the pristine Jarrah forests of Western Australia. Our hives are placed in these natural environments where bees produce high-quality, pure honey. The honey is extracted using modern, hygienic methods, ensuring its cleanliness and quality.

Unlike many commercially available honeys, Fewster’s honey is 100% natural and free from additives, preservatives, colors, or sugars. It is tested for moisture content, which typically falls below 16%, ensuring a long shelf life.

Jarrah honey’s quality is measured by the term “Total Activity (TA)”. The TA is like a scale; the higher the TA the greater the strength. The activity of honey is derived via natural enzymes and chemicals in the honey. A description of the method used to determine the Activity of honey is included in this paper by Rob Manning. Any honey with a TA of greater than 10+ may have beneficial antimicrobial properties, and these properties are more effective as the TA level increases. Note that the UMF value on Manuka honey is essentially the same as a TA value, but the antimicrobial activity is generated by different chemical processes.

Total Activity is the combination of Peroxide Activity (PA) and Non-Peroxide Activity (NPA). In Jarrah honey, nearly all of the Activity is PA, and results from a reaction between an enzyme placed in the honey by the bees called Glucose Oxidase and glucose. This reaction, which starts when the honey is diluted, results in the gradual production of a low concentration of hydrogen peroxide. Hydrogen Peroxide is a powerful antibacterial and antifungal agent when operating in conjunction with honey’s other antiseptic properties, but is gentle on human tissue and the digestive system.

NPA results from any other chemicals in the honey that have an antibacterial effect. In Manuka honey, in which nearly all TA is NPA, the active chemical is Methylglyoxal (abbreviated to MGO). The MGO forms over time in the honey from the interaction of a chemical called dihydroxyacetone (DHA), which originates from the nectar of the Manuka flower, and other naturally-occurring proteins and amino acids in the honey. MGO is cytotoxic (toxic to cells).

Manuka producers have adopted two methods to describe the activity of Manuka honey that have vastly different values for the same honey. The UMF (Unique Manuka Factor) is a trademarked term to describe the NPA. More recently, an MGO value, which is the assayed methylgloxal content in mg/kg, is being used by some producers.
