Aged in Centuries Old Casks

Premium Condiments From Modena, Italy

Grapes are selected for their quality and delicate concentration of sugar and acidity, usually Lambrusco and Trebbiano varieties from Modena and Reggio Emilia in Italy. The grapes are pressed and the juice is boiled down to a thick, sweet syrup that ages in a wooden cask with the “Mother” vinegar.

The heart of our production is a collection of 600 casks dating back to the 1600s, from where the purest extractions that create the unmistakable aroma of our balsamics are collected. Casks provide an intensity of wood essences and aromas, and the older the cask, the more complex the vinegar.
