Ingredients: Pepper, Carapelli Unfiltered EVOO, Lemons, Salt, Crushed Red Pepper, Salmon Fillets, Lemon Juice, Saffron, Garlic, Italian Parsley
Directions: Saute garlic, crushed red pepper and saffron in Carapelli Unfiltered EVOO. Brush over salmon and add a squeeze of lemon and a pinch of salt. Sprinkle in Italian Parsley. Serve with seared lemon slices.
Ingredients: Pizza Dough, 3 Tbsp. Heavy Cream, 1 Minced Garlic Clove, 3 Slices Prosciutto, 2 Eggs, 1 Tbsp. Chopped Parsley, Carapelli Unfiltered EVOO
Directions: Preheat oven to 425 F. Roll out pizza dough and drizzle and spread unfiltered EVOO over dough. Sprinkle glove and heavy cream over oil. Spread with a spoon. Cover with prosciutto. Set on a parchment covered cookie sheet and place in oven cracking the eggs over the prosciutto (don’t spread). Bake until dough is lightly browned. Sprinkle on remaining ingredients and serve.
Ingredients: Balsamic Vinaigrette, Sea Salt, Gorgonzola, Spanish Almonds, Pancetta, Carapelli Unfiltered EVOO, Arugula, Pepper, Figs
Directions: Drizzle olive oil in sauce pan on medium heat. Crisp pancetta in the oil. In a separate bowl, Toss arugula in Unfiltered olive oil. Quarter figs and add to arugula along with pancetta. Crumble gorgonzola and add along with Spanish almonds and a pinch of salt and pepper. Drizzle with balsamic vinaigrette.
Ingredients: Carapelli Unfiltered EVOO, Purple Onion, Black Pepper, Prime Rib, Fresh Rosemary, Beef Stock, Black Truffle, Red Wine, Garlic, Sea Salt
Directions: Preheat oven to 300 F. Brush rib with Unfiltered EVOO. In a bowl, pour unfiltered EVOO and add salt, pepper, onion and garlic. Mix and spoon over prime rib. Cover rib with rosemary. Roast rib to taste. Pour beef stock, rib seasoning from pan, wine, salt, and pepper into pan. Bring to simmer on stove and pour over rib. Grate truffle over. Cut and serve.
