Ingredients: Carapelli Organic EVOO, Strawberries (Sliced), Rustic Boule, Toasted Almond Slices, Fresh Ricotta, Shaved Dark Chocolate.
Directions: Slice rustic boule into ½ inch thick slices. Toast until golden. Drizzle with Carapelli Organic EVOO, Spread with a generous amount of ricotta. Add strawberries, then serve topped with the desired amount of toasted almonds and shaved dark chocolate.
Ingredients: 32oz Flat Iron Steaks, 2 Bunch Scallions, Kosher Salt, 1 Tbsp. + 1 tsp. Divided Carapelli Organic EVOO, Black Pepper, Sea Salt
Directions: Sprinkle steaks with kosher salt and black pepper. Set aside and prep scallions. Preheat grill for medium-high direct heat and wipe with 1 Tbsp. of Carapelli Organic EVOO. Grill steaks 5 mins. per side, flipping occasionally. Let steaks rest. Toss scallions in 1 tsp. EVOO, sprinkle with salt and pepper and char for 3-4 mins.
Ingredients: 16 Sea Scallops, 4 Tbsp. + 1 Tbsp. + 4 tsp. Divided Carapelli Organic EVOO, Black Pepper, 1/4 Tsp. Kosher Salt, Sea Salt, 2 Ears Corn, 3 Leeks, 2 Tbsp. Dry White Wine
Directions: Prep scallops, corn and leeks. Saute leeks salt and corn over medium-low heat, in Carapelli Organic EVOO and stir in white wine. In a separate pan, increase heat to medium-high and sear salt and pepper sprinkled scallops in Carapelli Organic EVOO. Serve scallops with corn and leeks and sprinkled with sea salt.
Ingredients: 3 Red Peppers, 3 Tbsp. Carapelli Organic EVOO, 1/2 cup Diced White Onion, 1 Tbsp. Lemon Juice, 1/4 cup Fresh Parsley, 1 cup Raw Cashews, 1 cup Unsweetened Almond Milk, 1 tsp. Pink Himalayan Salt, 1/2 tsp. Black Pepper.
Directions: Preheat oven to 450 F. Arrange sliced red peppers on lined baking sheet, drizzle with organic EVOO and roast for 25 mins. Transfer peppers, oil and roasting liquid to blender. To the blender add in the onion, lemon juice, parsley, cashews, almond milk, salt and pepper, and blend until completely smooth and creamy. Drizzle with olive oil and black pepper to serve.
