The bees were treated to an abundance of yellow and white sweet clover in addition to a fair amount of alfalfa from the pastures and hay fields of the North Dakota prairie. The resulting honey is very light in color with a delicate sweetness and floral flavor. Not as robust or intense as many other honey varietals, TJO Bees is a great alternative for traditional sweetners.\u003c\/p\u003e\u003cp\u003eEach year we harvest our honey in mid August. After the honey is extracted, it naturally crystallizes within 2-3 months, sometimes sooner. In order to bottle the raw, crystallized honey and maintain all the natural goodness, we warm it slowly to 96 degrees until it reaches a semi-crystallized state which can be bottled into jars.\u003c\/p\u003e\u003cp\u003eNothing more. Nothing less. Our honey is neither filtered or strained so it maintains all the beneficial pollen and microscopic enzymes. To liquify the honey, place the jar in a warm water bath until the desired consistency is achieved.\u003c\/p\u003e\u003cp\u003eTJO Bees is a husband\/wife, beekeeping team managing around 1,000 hives in SW North Dakota.
